Chefs Pecan Pie

Chefs pecan pie is a simple and quick pecan pie recipe suitable for every occasion. Double or triple the recipe with little extra work. Great pecan pie for holiday gatherings or casual brunch. Serve hot with cool whip topping or ice cream.
Ingredients -
 
1 unbaked 9-inch Pie Shell
1 1/2 cups Sugar
1/2 cup Light Karo (or cane sugar) Syrup
1/4 cup Unsalted Butter
A pinch of Sea Salt
3 Extra-Large Eggs, well beaten
1 cup Jumbo Pecans
 
Preparation:
 
1. Preheat oven to 375 F.

2. In large sauce pan bring sugar, syrup, butter and salt to a boil.

3. In small bowl beat eggs. Add nuts to eggs.

4. Stir a very small amount of the syrup mixture into the eggs. Stir well to warm eggs.

5. Quickly pour egg mixture into syrup.

6. Pour pecan pie mixture into pie shell.

7. Bake for 45 minutes.

8. Check pie for doneness.

 
Variations and Recipe Ideas:
Serve with butter pecan or vanilla ice cream.
 
 

Cooking Tip

Cooling Pecan Pie
After checking the pecan pie for doneness, its best to let a pecan pie continue to cook on a rack outside the oven. The pie will continue to cook and the filling will set up. Serve the pie after it has had a chance to cool. If you wont be serving immediately. after the pie comes to room temperature, place pie in refrigerator until ready to use.
