Chocolate Caramel Pecan Pie

Buttery pecan pie crust filled with luxurious pecan pie filling made from pecans, whipping cream, chocolate, caramels, and vanilla. Serve year round, pie makes a wnderful addition to brunches, dinner parties, and large gatherings. This rich dessert will satisfy any occasion.
Ingredients -
 
3 cups Pecan Pieces
1/4 cup Sugar
1/2 stick Butter, melted
14 ounces package Caramels
2/3 cup Whipping Cream
8 squares package Semisweet Baking Chocolate
1/4 cup Powdered Sugar
1/2 teaspoon Vanilla
 
Preparation:
 
1. Preheat oven to 350 F.

2. Process 2 cups of the pecans in a food processor, until finely ground.

3. Add sugar and butter to pecans, mix well.

4. Press the pecan mixture into a 9-inch pie plate.

5. Bake until lightly browned, about 10-12 minutes. Cool the piecrust.

6. In a small saucepan over medium heat, gently stir the caramels and 1/3 cup whipping cream until caramels are melted.

7. Pour the caramel whipping cream mixture into piecrust.

8. Chop the remaining pecans into tiny pies and sprinkle over the pie.

9. In small saucepan, over low heat, stir chocolate, remaining whipped cream, powdered sugar, and vanilla until chocolate melts and mixture is a smooth consistency.

10. Spread chocolate mixture over top of pie.

11. Refrigerate 2-4 hours.

Garnish individual servings with pecan pieces.

Pecan Pie Crust
Recipe calls for a food processor, but a blender will do the trick. If you dont have access to either, place pecans in a ziplock bag and crush with kitchen mallet.
