Chocolate Pecan Pie Bars

Chocolate pecan pie style cookie bars start with dough made all-purpose flour, granulated sugar, baking powder, ground cinnamon, and butter. Pecans are mixed in prior to baking. A chocolate topping made from melted butter and semisweet chocolate, eggs, bourbon, brown sugar, and vanilla gets poured on and the bars are finished baking.
Ingredients -
 
1 1/4 cup All Purpose Flour
1/4 cup Granulated Sugar
1/2 teaspoon Baking Powder
1/2 teaspoon Ground Cinnamon
1/2 cup Butter or Margarine
1 cup finely chopped Pecans
1/4 cup Butter
1 square (1 ounce) SemiSweet Chocolate
3 beaten Eggs
1 1/4 cups packed Brown Sugar
2 tablespoons Bourbon
1 teaspoon Vanilla
 
Preparation:
 
1. Preheat oven to 350 degrees.

2. Mix flour, granulated sugar, cinnamon, and baking powder in a medium-mixing bowl.

3. Slowly cut in ½ cup butter, until dough resembles coarse crumbs.

4. Mix pecans into dough.

5. Press pecan pie bar dough into bottom of un-greased 13” x 9” x 2” baking pan.

6. Bake 10 minutes.

7. While bars are baking, combine ¼ cup of butter with chocolate in a saucepan over low heat, until chocolate is melted.

8. In a small bowl beat eggs with brown sugar, bourbon, and vanilla. Stir egg mixture into chocolate.

9. Pour over bars and return baking pan to oven.

10. Bake 20 minutes. Cool on wire rack. Cut into bars.

 

Cooking Tip

Vanilla
No need for high quality or fresh vanilla in this recipe. A good vanilla extract out of the pantry will do just fine.

Cooking Tip

Bourbon
You could substitute 2 tablespoons of water for the bourbon if you prefer no alcohol in the recipe.
