Pecan Pie Cookies

Pecan pie cookies look like little pecan pies and taste like pecan pie. Simple to make brown sugar cookies with a pecan pie like filling in the center.
Ingredients -
 
Cookies:
1 cup firmly packed Brown Sugar
3/4 cup Butter, softened
1 Egg
1 teaspoon Vanilla
2 cups All-Purpose Flour
1 teaspoon Baking Powder

Filling:
1 cup chopped Pecans
1/2 cup firmly packed Brown Sugar
1/4 cup Heavy Whipping Cream
1 teaspoon Vanilla

 
Preparation:
 

1. Preheat oven to 350 F.

2. Combine brown sugar, butter, egg, and vanilla in large bowl. Beat on low speed with hand mixer until creamy. Gradually add flour and baking powder to bowl, beat until well blended.

3. Shape cookie dough into 1-¼ inch round balls. Place equal distance apart on cookie sheets.

4. Press thumb in center of balls to create indentation.

5. Combine pecans, brown sugar, heavy whipping cream and vanilla in small bowl. Fill each cookie with 1 teaspoon filling.

6. Bake 10-12 minutes, or until slightly browned.

7. Allow cookies to cool.
