Rich Pecan Pie

A flaky, buttery homemade pie crust filled with a time-tested rich, delicious pecan filling. Serve warm or cool and serve later. Perfect pie recipe for any occasion, every day to holiday, from brunch to midnight snack.
Ingredients -
 
1 recipe for Single-Crust Pie Pastry

Pecan Pie Filling:
3 slightly beaten Eggs
1 cup corn Syrup
2/3 cup Sugar
1/3 cup Butter or Margarine, melted
1 teaspoon Vanilla
1 1/4 cups Pecan Halves

 
Preparation:
 

1. Preheat oven to 350 F.

2. In a mixing bowl, combine eggs, corn syrup, sugar, butter and vanilla and mix until well blended.

3. Add pecans to mixture and coat pecans well.

4. Place pastry into pie plate, trim edges if necessary.

5. Pour pecan pie mixture into pie shell.

6. Bake 40 minutes or until edges are firm and center is soft, but set.

7. Cool on a wire rack.

8. Cover and refrigerate within 2 hours.
