Sugar Free Pecan Pie

Sweet sugar free pecan pie. Easy recipe combines granular fructose and sugar free vanilla pudding to create a pecan pie filling. Top with pecans and grape nuts. Prepare in minutes, serve to family and friends tonight.
Ingredients -
 
1/3 cup Water
2/3 cup Granular Fructose
2 (0.8-ounce) packages Sugar Free Vanilla Pudding
3/4 cup Evaporated Skim Milk
2 Extra Large Eggs
1 Unbaked 9-inch Pie Shell
1/4 cup chopped Pecans
1/2 cup Grape Nuts Cereal
 
Preparation:
 

1. Preheat oven to 350° F.

2. In a small sauce pan, over low heat, simmer water and fructose for 5 minutes.

3. Allow to cool.

4. Stir pudding into fructose mixture. Add eggs and evaporated skim milk. Mix well.

5. Pour pecan pie mixture into pie shell. Top with pecans and cereal.

6. Bake 30 minutes, or until pie center is set.

7. Place on wire rack and allow to cool for 3 hours.

Cooking Tip

Pecans
Recipe calls for both grape nut cereal and chopped pecans. Perfectly ok to substitute more pecans for the grape nuts.
