Sweet Pie Crust

Simple sweet pie crust for use in baking the best pecan pies. Flour, sugar, salt, shortening, and a little water make a flaky, tender pie crust perfect for filling with your favorite filling.
Ingredients -
 
1 1/2 cups plus 2 tablespoons All-Purpose Flour
1/2 teaspoon Salt
1 tablespoon Sugar
1 stick (1/4 pound) cold Butter, cut into 1/4-inch pieces
2 tablespoons Solid Vegetable Shortening
3 tablespoons Ice Water
 
Preparation:
 
1. In a large bowl, sift the flour, salt and sugar together.

2. Add shortening, and use your hands to create a mixture that resembles coarse crumbs. Do not over mix.

3. Add 2 tablespoons ice water. Work until dough comes together. Add more water, if necessary.

4. Form dough into a disk. Wrap dough in plastic wrap very tightly.

5. Refrigerate 30 minutes or more before rolling out.

6. On a lightly floured cutting board or countertop, roll dough from center out to a piecrust that extends out over a 9-inch pie plate.

Cold Ingredients
For best results, measure out and chill all the ingredients in the refrigerator or freezer until ready to prepare the pie crust.

Glass Pie Plate
Glass pie plates are preferred over metal. Glass allows the pie crust to brown properly. You may want to lower the temperature your pie bakes at by 25 degrees.
